Corn Salad

Ingredients

  • 6 ears of Corn- boiled for 7 minutes
  • ¼ cup chopped red onion
  • 2 cups halved cherry tomatoes
  • 1 cucumber seeded and chopped
  • 1/8 cup white Balsamic vinegar
  • ¼ cup EVOO
  • ¼ cup chopped fresh Basil
  • 1 tbsp. Thyme
  • Salt & pepper

Directions

  1. Strip kernels off of cobs and place into a large bowl
  2. Add chopped onion and tomatoes and add to bowl
  3. Toss with Olive Oil, vinegar and dry spices
  4. Taste for flavor and serve at room temperature or chilled
