Ingredients
- 6 ears of Corn- boiled for 7 minutes
- ¼ cup chopped red onion
- 2 cups halved cherry tomatoes
- 1 cucumber seeded and chopped
- 1/8 cup white Balsamic vinegar
- ¼ cup EVOO
- ¼ cup chopped fresh Basil
- 1 tbsp. Thyme
- Salt & pepper
Directions
- Strip kernels off of cobs and place into a large bowl
- Add chopped onion and tomatoes and add to bowl
- Toss with Olive Oil, vinegar and dry spices
- Taste for flavor and serve at room temperature or chilled
