Ingredients
- 3 cups shredded cooked chicken (also good with left over steak)
- 1 large onion, sliced
- 1 large red pepper, sliced into strips
- ¼ cup of Mexican dry spices
- 2 tbsp. Olive oil
- 2 cups shredded cheddar cheese
- Salsa
- 6 soft tortillas
Flank Steak for Beef Fajitas
- 2 lb. Flank steak
- 2 tbsp. dry seasoning mix
- ¼ cup red wine vinegar
- 1 tsp. coarse ground mustard
Directions
- In large frying pan, place olive oil over medium heat
- Saute onions and peppers and ½ of dry spices, cook until tender
- Place in covered dish to keep warm
- Add more olive oil to pan and heat over medium heat. Add cooked chicken to heat tossing with remaining spice mix
- Place into a covered dish and serve with cheese and sauteed vegetables
