Fajitas

Ingredients

  • 3 cups shredded cooked chicken (also good with left over steak)
  • 1 large onion, sliced
  • 1 large red pepper, sliced into strips
  • ¼ cup of Mexican dry spices
  • 2 tbsp. Olive oil
  • 2 cups shredded cheddar cheese
  • Salsa
  • 6 soft tortillas

Flank Steak for Beef Fajitas

  • 2 lb. Flank steak
  • 2 tbsp. dry seasoning mix
  • ¼ cup red wine vinegar
  • 1 tsp. coarse ground mustard

Directions

  1. In large frying pan, place olive oil over medium heat
  2. Saute onions and peppers and ½ of dry spices, cook until tender
  3. Place in covered dish to keep warm
  4. Add more olive oil to pan and heat over medium heat. Add cooked chicken to heat tossing with remaining spice mix
  5. Place into a covered dish and serve with cheese and sauteed vegetables
