Kelly’s Clam Stew

Ingredients

  • 3 tbsp EVOO
  • 4 lbs. Fresh Clams (small)
  • ½ link Chouriço (remove skin and chop)
  • 3 medium ripe tomatoes (chopped)
  • 6 cloves garlic (crushed)
  • ½ cup of dry red wine
  • 1 sweet onion(chopped)
  • 1 green pepper(chopped)
  • 1 tbsp crushed red pepper

Directions

Scrub clams and place into a large bowl of cold water along with 14 cup corn meal to soak for 1 hour.

In large pot add EVOO with onions, green pepper and chouriço and saute for 5 minutes.

Add garlic and saute for 3 minutes more.

Add wine and crushed red pepper and bring to a boil over high heat.

Add rinsed clams to pot, cover tightly and let steam for 10 minutes.

When clams are open, remove from heat and spoon into large serving bowl.
