Ingredients
Caramelized Sugar Syrup
- 1 cup sugar
- ½ cup boiling water
Flan
- 2 cups Half and half
- 2 cans sweetened condensed milk (14 oz.)
- 8 jumbo eggs
Directions
Caramelized Syrup
Place the sugar in a medium-sized heavy skillet, set over moderately low heat, and allow to melt and caramelize to a rich golden brown.
Add the boiling water, teaspoon at a time stirring briskly to dissolve the sugar.
Simmer uncovered 10 minutes until the consistency of maple syrup.
Flan
Preheat the oven to 350°.
Combine the milks in a medium bowl and beat with eggs for 3 minutes.
Coat a shallow baking dish or bundt pan with syrup making sure all sides are coated then pour egg mixture into prepared dish.
Place pan into another larger dish and pour in enough hot water to come up halfway up the sides of the outer dish.
Bake uncovered l hour.
Remove from oven and cool 1 hour, then refrigerate 4 to 5 hours until firm.
