Maria’s Portuguese Turkey

(Everyone’s Favorite)

Ingredients

Brine Soak:

  • 1 thawed turkey, 15-20 lbs.
  • 2 tbsp salt & 1½ gal water
  • Juice of 1 lemon

Marinade:

  • 1 tsp nutmeg
  • 8 large garlic cloves- Crushed with end of large knife
  • 2 tbsp sweet paprika
  • ¼ cup crushed red pepper
  • 2 packets Goys Sazon seasoning
  • juice of 2 lemon
  • 2 bouillon cubes (Knorr)
  • 1 tsp black pepper
  • 1 tsp cumin
  • ¼ cup olive oil

To Cook add:

  • ½ green pepper- sliced thin
  • ½ red pepper- sliced thin
  • ½ stick butter

Directions

Day 1

Soak turkey in enough water to cover, add salt and lemon, cover and soak in the refrigerator overnight.

Day 2

Remove from brine and rinse in clean water. Rub inside and out with lemon.

Stab turkey with large serving fork. Combine; oil, garlic, paprika, bay leaves, salt, red pepper, Sazon seasoning, hot pepper sauce and dry seasoning in large bowl.

Marinate turkey in this mixture for 24 hours, covered under refrigeration.

Turn occasionally in marinade.

Day 3

Preheat oven to 400°.

Remove turkey from marinade, reserving marinade.

Put 1/2 sliced green and red pepper in bottom of pan. Put turkey into roasting pan and pour reserved marinade over turkey, add remaining sliced pepper and pads of butter on top.

Cover with foil, piece to vent and roast turkey for 1 hour;

Reduce heat to 350°, keep covered and roast turkey about 2 hours more.

Baste turkey every ½ hour with sauce. After 3 hours uncover and continue cooking for ½ hour more or until golden brown.

Turkey should fall off bones when done.
