New England Clam Boil

Ingredients

Pot 1

  • Chouriço
  • Linguica (hot dogs for kids cook only for 10 minuets)
  • Onions (peeled and left whole)
  • Potatoes (medium red skin)
  • Carrots (peeled and kept whole)

Pot 2 (for Clams)

  • 7 lbs steamers or little neck clams
  • ¼ cup garlic (chopped)
  • Olive oil ½ cup
  • 2 tbsp butter
  • 2 tbsp crushed red pepper
  • 2 tbsp garlic powder
  • Juice of 1 lemon
  • Parsley (chopped fine)

Directions

Soak clams in a large pot of cold water with pepper, salt or corn meal for 20-40 minutes.

In a large pot filled halfway with water cook sausage on high for about 40 minutes.

Add a little salt, potatoes, carrots and onion and cook for another 20 minutes.

In second pan add oil, butter and garlic and let saute for a couple of minutes. Before garlic browns add the crushed red pepper, garlic powder, lemon juice and let boil on high for about 1 minute then add clams and cover tightly.

Steam clams for 10-15 minutes until all clams are open.

Add parsley and toss gently to cover clams.
