Tostadas

Ingredients

  • 1 cup shredded cooked chicken, ground beef of sliced meat
  • ½ onion, chopped
  • ½ red pepper, sliced
  • 1 can of black beans, drained and rinsed
  • 3 tbsp. of Mexican dry spices
  • 2 cups shredded cheddar cheese
  • 6 corn tostadas
  • Salsa

Directions

  1. Preheat oven on bake to 350
  2. Toss chicken or beef with dry spice mix, blend well and set aside
  3. Place tostadas onto a cookie sheet in a single layer. Top with seasoned
    meat, sprinkle with chopped vegetables and black beans. Top all
    with shredded cheese and bake for 20 minutes until the cheese is melted

Also, good with corn, sliced black olives and sour cream.
