Bar-B-Q Bacon-wrapped Shrimp

Ingredients

Shrimp:

  • 1 tbsp spicy rub
  • Grape seed Oil (can also use EVOO)
  • 1 lb. Large shrimp- raw, cleaned and deveined
  • 1 lb partially cooked bacon
  • ½ cup spicy dipping sauce

Cocktail Sauce:

  • ¼ cup ketchup
  • 1 tbsp hot sauce
  • 1 tsp lemon juice
  • 1 tbsp horseradish
  • 1 tsp Worcester sauce

Directions

Brush cleaned, deveined shrimp with grape seed oil. Sprinkle shrimp with dry BBQ rub to coat. Refrigerate for about 1 hour for flavors to develop.

Meanwhile, partially cook strips of bacon so that they are still flexible yet about half way cooked.

Warm BBQ sauce on stove. Wrap shrimp with bacon strips and secure with toothpicks or thread onto skewers. Grill or bake until shrimp are pink and bacon is crisp, turning once during cooking. Serve immediately with dipping sauce.
