Chickpea Salad

Ingredients

  • 1 can of Chick Peas, drained and rinsed
  • ½ pint of cherry tomatoes quartered
  • 1 cucumber, seeded and chopped
  • ½ cup mozzarella balls, pearl size
  • ¼ cup red onion, chopped
  • 2 tbsp. coarsely chopped fresh parsley
  • 1 tbsp. lemon juice
  • ¼ cup olive oil
  • 1 tbsp. Adobo all purpose seasoning

Directions

  1. In a medium mixing bowl, gently stir together chick peas, tomatoes,
    cucumber, cheese, onions and parsley to combine; set aside
  2. In a separate bowl, stir together lemon juice and Adobo seasoning. Using whisk, add olive oil in slow steady stream, whisking constantly until oil is well incorporated
  3. Toss dressing with reserved vegetables until coated and serve chilled or at room temperature
