Spanish Clams

Ingredients

  • 3 lbs. small clams. Scrubbed
  • 4 cloves of Garlic, minced
  • 1 Tbsp. crushed Red Pepper
  • 1 sweet onion, sliced thin
  • 1 red pepper, sliced thin
  • ¼ cup white wine
  • ¼ cup EV Olive Oil

Directions

  1. Heat Olive oil in a large stock pot on medium heat
  2. Add onion and pepper to olive oil and saute for 10 minutes until tender
  3. Add garlic and saute for 3 minutes more
  4. Add wine and crushed pepper and bring to a boil over high heat. Add clams, cover and cook for 10 minutes until clams open
  5. Toss holding cover securely to coat clams with sauce
