Ingredients
- 3 lbs. small clams. Scrubbed
- 4 cloves of Garlic, minced
- 1 Tbsp. crushed Red Pepper
- 1 sweet onion, sliced thin
- 1 red pepper, sliced thin
- ¼ cup white wine
- ¼ cup EV Olive Oil
Directions
- Heat Olive oil in a large stock pot on medium heat
- Add onion and pepper to olive oil and saute for 10 minutes until tender
- Add garlic and saute for 3 minutes more
- Add wine and crushed pepper and bring to a boil over high heat. Add clams, cover and cook for 10 minutes until clams open
- Toss holding cover securely to coat clams with sauce
