Ingredients
- cup EVOO
- 5 lbs. Fresh Clams (small)
- 6 cloves garlic- crushed
- ¼ cup dry white wine
- 2 tbsp crushed red pepper
- 3 tbsp parsley (chopped) (for everyone but Tracy)
Directions
Scrub clams and place into a large bowl of cold water along with ¼ cup corn meal to soak for 1 hour.
In large pot add EVOO with garlic, sauté for 3 minutes. Add wine and crushed red pepper and bring to a boil over high heat.
Add rinsed clams to pot, cover tightly and let steam for 10 minutes. When clams are open, remove from heat, add parsley and toss with cover on.
Serve with crusty bread for dipping.
