(Kelly’s favorite)
Ingredients
- cup EVOO
- 5 lbs. Fresh Clams- small
- 6 cloves garlic- crushed
- 2 sweet onions- sliced thin rings
- 1 green pepper- sliced thin
- ¼ cup dry white wine
- 2 tbsp crushed red pepper
Directions
Scrub clams and place into a large bowl of cold water along with ¼ cup corn meal to soak for 1 hour.
In large pot add EVOO with onion and green pepper and sauté for 10 minutes.
Add garlic and saute for another 3 minutes. Add wine and crushed red pepper and bring to a boil over high heat.
Add rinsed clams to pot, cover tightly and let steam for 10 minutes. When clams are open, remove from heat, add parsley and toss with cover on.
Serve with crusty bread for dipping.
