(Aunt Sandra’s favorite)
Ingredients
- 1 cup rice- enriched medium grain
- 2 cups milk
- 2 cups water
- rind from 1 lemon
- ½ tsp salt
- 1 package lemon instant pudding mix
- 1 cup sugar
- ½ stick unsalted butter
- 1½ tsp ground cinnamon
Directions
Place rice in a measuring cup with 1 cup of water for 10 minutes.
In a heavy saucepan set over moderate high heat, bring the water, lemon rind, milk and butter to a boil.
Remove lemon rind, add rice, salt to pan and stir. Adjust the heat to a simmer and cook the rice uncovered for 25 minutes stirring 2 times during the time.
Add pudding mix and sugar, stir and continue cooking for 5 more minutes.
Pour onto a large plate and let cool. Decorate the top with ground cinnamon.
