Ingredients
- 2 cups chopped cooked Chicken
- 1 lb. Ziti or similar pasta, cooked to directions on box
Sauce
- ¼ cup Olive Oil
- 1 medium onion coarse chopped
- 1 red pepper, seeded and coarse chopped
- 1 small summer squash coarse chopped
- 1 can artichokes, chopped
- 4 cloves chopped garlic
- ½ cup white wine
- Salt & pepper
- ½ tsp. each garlic & onion powder
Directions
- In a medium sauce pan saute onion and pepper for 10 minutes in olive oil. Add the remaining vegetables and saute until tender
- When vegetables are finished, add chopped garlic and continue cooking for 3 more minutes
- Add wine and dry seasoning and bring to a boil
- Taste for flavor and adjust as needed, add cooked chicken to heat. Serve over pasta.
