Smoked Chicken Picatta

Ingredients

  • 1 lb. Smoked Chicken (¼” diced)
  • 1 large. Shallot (¼” diced)
  • 1 tbsp. EVOO
  • ¼ cup lemon juice
  • ½ bunch parsley (chopped)
  • 1 cup heavy cream
  • 3 oz. Capers
  • 1 lb. Italian Couscous
  • Salt and Pepper to taste

Directions

Heat EVOO, add shallots and saute for 3-4 minutes, add diced chicken. Add lemon juice, heavy cream, and capers.

Reduce cream by half then finish sauce with parsley.

Mix with Italian couscous.
