Ingredients
- 1 lb. Smoked Chicken (¼” diced)
- 1 large. Shallot (¼” diced)
- 1 tbsp. EVOO
- ¼ cup lemon juice
- ½ bunch parsley (chopped)
- 1 cup heavy cream
- 3 oz. Capers
- 1 lb. Italian Couscous
- Salt and Pepper to taste
Directions
Heat EVOO, add shallots and saute for 3-4 minutes, add diced chicken. Add lemon juice, heavy cream, and capers.
Reduce cream by half then finish sauce with parsley.
Mix with Italian couscous.
